Cheesy Cucumber Cracker Cats

This is the final snack I’m sharing for Nuts.com: cheesy cucumber cracker cats.

These are so quick to make, they’re basically a zero on the preparation scale. They are also a) healthy and b) delicious, and I discovered that I hadn’t made enough of them when the girls asked for more.

Ingredients

Round crackers (I used Salticrax)

Cucumber

Cottage cheese

Cheddar cheese

To make

Wash (or peel) the cucumber. Slice into rounds. Finely grate the cheddar cheese.

Cheesy Cucumber Cracker Cats

Place two crackers on a plate. Spread with cottage cheese and place a slice of cucumber on top of each. Cut two small triangles from one of the cucumber rounds and arrange as the cat’s ears. Use another piece of cucumber to make the cat’s tail. If you’re feeling particularly creative, make a face with cottage cheese.

For option two, place two crackers on a plate. Sprinkle grated cheese over each. Cut two small triangels from one of the cucumber rounds and arrange as the cat’s ears. Use another piece of cucumber to make the cat’s tail.

And there you have it: cheesy cucumber cracker cats. (And isn’t that so much fun to say out loud?)
